Ma’s Ham & Potatoes

This past weekend my mom made her famous ham and potato dish. If you were one of my friends growing up, you most likely had this dish at least a few times. It was the one recipe I constantly asked my mom to make. The origin of the recipe came from my mom’s love of cooking and creating new dishes. Naturally, it only made sense for me to share this recipe with the rest of the world. One of my favorite things about this recipe is how easy it is to make and is something you can throw together for a quick dinner.


Serving size 4-6 people

  • 4-5 potatoes (skin on)
  • Ham slice (thick cut), (looks like a ham steak)
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • Olive oil
  • Kosher salt
  • Pepper
  • 1-2 tablespoons butter
  • Garlic powder
  • Onion powder
  • McCormick’s garlic blend spices
  • Parmesan cheese

First thing you want to do is get a roasting pan and spray it with an olive oil cooking spray. Preheat oven to 400 degrees. Then wash the potatoes and dice them into cubes. Place them in the roasting pan and put to the side. Next remove the ham from the package and cut into cubed pieces removing the rind and any bone marrow. Add to the pan. Next chop the onions as finely as you want; add to the pan.FullSizeRender-4

FullSizeRender-5 Drizzle olive oil to coat potatoes thoroughly. Add minced garlic and season with salt, pepper, and suggested herbs. Put a tablespoon or 2 of butter on top (mix it in after butter has melted in the oven). Place dish in the oven and cook approximately 45 minutes to 60 minutes till potatoes are done, stirring halfway through. Sprinkle parmesan cheese on top before serving.



Voila! A one dish meal that is absolutely delectable. The ham adds a nice flavor but bacon or turkey bacon could be substituted. Hope you enjoy this dish that is reminiscent of my childhood and it too becomes one of your family favorite’s. And don’t forget to cook with love!
